Cumberland Ginger Biscuits

You can almost imagine William Wordsworth taking a few of these biscuits on one of his walks around the Lake District, and now you can try

Mix together 

5oz SR flour

4oz oats

1 tsp ground ginger

1 tsp bicarbonate of soda


Melt together (but do NOT boil)

4oz butter or margarine

8oz soft brown sugar

1 tablespoon golden syrup

Pour onto dry ingredients and mix thoroughly. Form into small balls (walnut-size) and place on greased baking sheet. Press down lightly with fork and bake until brown at about 175C (160 fan) or gas 4. Cool on sheet before removing.
