Oatie Cookies

Preheat oven to 180c gas mark 4

Lightly grease baking sheets

Mix the following dry ingredients:

125g self-raising flour

125g light brown soft sugar

125g porridge oats

Half tsp bicarbonate soda

Melt these 2 ingredients:

125g butter

1 tablespoon golden syrup

Add to the dry ingredients. Mix well. May have to add a little milk to bind, but don't make it too sloppy.

Divide into 16 and shape each piece into a ball. Arrange on baking sheet, spread apart. Slightly flatten. Bake for 12-15 minutes. Important not to overcook, and are slightly soft as they harden as they cool. Aim for a light golden brown rather than any darker. Let cool for a few minutes before remove from tray and then leave to cool further. When cool, the following option is to:

Melt 125g chocolate and using a pastry brush paint over half the cookie. Or use a piping bag to apply chocolate. Place in fridge to chill.

Adaptations have included adding to the dry mix cinnamon or stem ginger pieces (use its syrup instead of golden syrup) and ground ginger, or orange peel etc., or to the melted butter add vanilla or orange or lemon essence. Good basic recipe to be creative with....
